All-Natural Highland Beef Compares With Certified Organic Beef, but Costs Less!

You will like Wild Rose Meadows all-natural Highland beef because you will actually know what you are eating!

Scottish Highland beef naturally has less fat and lower cholesterol than commercial beef.

We purposely breed our own top grade steers from registered stock rather than buying cull cows, unwanted dairy cattle, or "feeder steers" purchased from an auction house.

We raise Scottish Highland steers the way God made them – on grassy pastures without any steroids, growth hormones or antibiotics in the feed.

Scottish Highland steers get 3 summers and 2 winters to mature in choice condition at their own pace. Feed-lot steers are pushed to maturity in 2 summers and 1 winter using steroids, growth hormones and antibiotics.

We spend a lot of time caring for each individual animal even though our breeding and hand-feeding program is much more labor intensive and costly than commercial feed-lot operations.

After raising our beef steers on fresh tender greens, they are finished on natural whole grains to insure excellent marbling, taste and texture.

Surprisingly, a beef quarter will not provide a lot of steaks and roasts. At least half of the packages will be lean ground steak. A complete beef steer will fit in a 21 cubic foot chest freezer with a bit of room at the top for other items. One beef quarter will leave a lot of room for other items.

Cutting and Packaging Options:

You have several options as to how you would like your meat cut and packaged.

You may select T-Bone and Porterhouse steaks, or New York Strips and Tenderoin

You may select round roast or round steak

bullet

You may select Delmonico steaks instead of rolled rib roast (freezer packages of the prime rib cuts).

You may select chuck roast or ground chuck.

You may select the thickness of the steaks.

Our ground beef is naturally lean - equivalent to “ground round” or “ground sirloin” at the grocery store, depending whether you individually package some of the less-than-prime cuts or add them to the ground beef.

You may choose to have ground beef made into patties in 5 pound bags, either 3 or 4 to the pound. (Pre-frozen patties have less juice than hand pressed patties)

Butchering and Packaging:

In accordance with USDA regulations, you purchase a portion of a steer prior to butchering. We make arrangements for the butcher to come to the farm and then take the beef quarters back to Byron Center Wholesale Meats in Byron Center, Michigan, south of Grand Rapids, for cutting, vacuum-packaging and freezing. They will call you to help you select your cuts and packaging options.

Your Investment:

Your investment is $2.25 per pound hanging weight in the cooler at Byron Center Wholesale Meats, plus your portion of the cost of butchering and processing.

Butchering normally costs about $80 per steer, $40 for a half, $20 for a quarter. Processing and packaging costs about $360 per steer, $180 for a half, $90 for a quarter.
